Delicious Compound Butters for Every Dish

So, what’s the deal with compound butters? It’s just a wonderful blend of butter with all sorts of tasty savory or sweet ingredients that create flavorful butter.

It’s a straightforward idea, but oh boy, the flavor combinations you can come up with are just limitless!  Having a freezer full of these incredible flavour bombs is pretty much the ultimate dream for any home cook or chef!

They’re a breeze to make! Just cut off what you need and throw it into your favourite dish! Why not give them a whirl to baste your favourite meats and fish?

They’ll melt beautifully over some tasty veggies, or you can just toss them into pasta for an effortlessly delightful meal!

Hey, here’s a quick tip for you: make sure your butter is nice and soft when you’re whipping these up! It really makes everything blend together nicely!

Capers and horseradish

  • 250 grams of butter
  • tablespoon of creamed horseradish sauce
  • 1 tablespoon of capers, finely chopped.

Mix all the ingredients into a bowl and mix them up really well! It goes wonderfully with steak and burgers, and it’s also excellent with fish like mackerel and tuna!

Shallots, tarragon, and red wine

  • Finely chop a large shallot.
  • Just a little splash of red wine—100 ml to be exact!
  • Finely chop 2 tablespoons of fresh tarragon and add it.

Throw the shallot and wine into a small pan and let it simmer on low heat until the wine reduces down to about a teaspoon, and those shallots soak up all that lovely color and flavor.

Let it cool completely before mixing in the butter.

Honeyed Blood Orange

  1. 1 heaping tablespoon of blood orange marmalade (make sure to finely chop any big chunks of rind)
  2. 1 teaspoon of honey

This one really tops our list of favorites! It’s quick and easy, and it works wonders on everything from sweet treats to savory dishes, like baked hams and grilled brioche bread.

Dill and lemon

  • 250 grams of butter
  • 2 tablespoons of chopped dill
  • Grate the peel of one lemon.

He is a real champion when it comes to fish and seafood!

Chipotle and maple bacon

  • 250 grams of butter
  • 1 tablespoon of finely chopped crispy bacon.
  • 1 tablespoon of maple syrup
  • 1 teaspoon of chipotle chili paste

It really elevates pork and chicken, not to mention grilled veggies, to a whole new level!

Here’s how to make your butterlog.”

  1. Spread your butter mixture right down the middle of a square of greaseproof paper, about 350mm by 350mm in size. 
  2. Take one long end and fold it over the butter, then roll the whole package towards you to create a log shape. 
  3. Just give one end a few twists, and while you’re holding onto that end, twist the other end the other way to shape your parcel. Easy peasy!
