Ingredients for Brussels Sprouts with Chorizo Sausage & Pickled Onions

  • 2 tablespoons of extra virgin olive oil
  • 2 teaspoons of thyme
  • 8 ounces of chorizo sausage (about 1 cup, chopped)
  • 8 ounces of pickled sweet mini silver skin onions (about 1 cup, halved)
  • 2.2 pounds of Brussels sprouts, blanched (about 8 cups)
  • Salt and pepper to taste

How to Make Brussels Sprouts with Chorizo Sausage & Pickled Onions

  1. Remove the skin from the chorizo and chop it into small pieces.
  2. Drain the pickled onions and halve them.
  3. Wash the Brussels sprouts thoroughly and blanch them briefly to keep them fresh and firm.
  4. Prepare your barbecue for direct heat at around 400°F. For a charcoal barbecue, use a full chimney starter of lit briquettes.
  5. Heat your Gourmet BBQ System Wok or a cast iron skillet over direct heat for about 5 minutes until hot.
  6. Add the olive oil to the wok or skillet, then add the chorizo. Stir the chorizo to release its juices and cook for another 2 minutes.
  7. Add the halved pickled onions and thyme to the wok or skillet, and stir to combine with the chorizo. Stir-fry for another minute.
  8. Add the blanched Brussels sprouts to the wok or skillet and toss to combine with the other ingredients. Cover and cook for about 4 minutes.
