Brussels Sprouts with Chorizo: Grill A Holiday Favorite Now

Ingredients for Brussels Sprouts with Chorizo Sausage & Pickled Onions
- 2 tablespoons of extra virgin olive oil
- 2 teaspoons of thyme
- 8 ounces of chorizo sausage (about 1 cup, chopped)
- 8 ounces of pickled sweet mini silver skin onions (about 1 cup, halved)
- 2.2 pounds of Brussels sprouts, blanched (about 8 cups)
- Salt and pepper to taste
How to Make Brussels Sprouts with Chorizo Sausage & Pickled Onions
- Remove the skin from the chorizo and chop it into small pieces.
- Drain the pickled onions and halve them.
- Wash the Brussels sprouts thoroughly and blanch them briefly to keep them fresh and firm.
- Prepare your barbecue for direct heat at around 400°F. For a charcoal barbecue, use a full chimney starter of lit briquettes.
- Heat your Gourmet BBQ System Wok or a cast iron skillet over direct heat for about 5 minutes until hot.
- Add the olive oil to the wok or skillet, then add the chorizo. Stir the chorizo to release its juices and cook for another 2 minutes.
- Add the halved pickled onions and thyme to the wok or skillet, and stir to combine with the chorizo. Stir-fry for another minute.
- Add the blanched Brussels sprouts to the wok or skillet and toss to combine with the other ingredients. Cover and cook for about 4 minutes.
