How to Make Garlic and Smoked Tomato Salsa at Home

Ingredients for Garlic and Smoked Tomato Salsa
Romesco Puree Ingredients
- 1/4 red chili, seeds removed
- 2 tablespoons toasted almonds
- 2 tablespoons toasted hazelnuts
- 1/3 cup olive oil
- 2 peeled cloves of garlic
- 1 slice of white bread, crust removed
- 1/2 red pepper, deseeded and chopped
- 1 tablespoon tomato puree
- 1 tablespoon + 1 teaspoon white wine vinegar
- A sprinkle of Maldon salt
Salsa Ingredients
- 4 large plum tomatoes, on the vine
- 1 red pepper
- 2 tablespoons olive oil
- 1 red chili
- 2 teaspoons Cabernet Sauvignon vinegar
- 1 teaspoon lime juice
- 1/4 cup chopped red onion
- 1 tablespoon Romesco puree (from above)
- A sprinkle of Maldon salt
- 2 teaspoons chopped fresh basil
Method for Garlic and Smoked Tomato Salsa
Making the Romesco Puree
- Place all Romesco puree ingredients in a food processor and blend until smooth.
- Set aside for use in the salsa.
Preparing the Smoked Tomato Salsa
- Char the red pepper and chili directly on the coals until blackened. Place in a bowl, cover with plastic wrap, and let them sweat for a few minutes.
- Lightly char the tomatoes on the BBQ until the skins split. Remove from the grill, place in a bowl, cover with plastic wrap, and let them steep for a few minutes.
- Peel the skins off the chili, tomatoes, and pepper, and remove the seeds.
- Chop the chili, tomatoes, and pepper into small pieces and place in a bowl.
- Add the vinegar, lime juice, Romesco puree, and chopped red onion.
- Mix well to combine all the flavors of your Garlic and Smoked Tomato Salsa, season with salt, and stir in the chopped basil.
